
Keto Rolls Recipe
Ingredients
Half cup /56g ground flax seeds
quarter cup/20g psyllium husks
three quarters teaspoon baking powder
1 cup/240ml warm water
half cup/132g tahini
grated cheese (I have added this in and have not measured - about a good handful). i have used feta and cheddar
optional: flaked dried onions
You could also try chives or other strong tasting additions
Method
#1 Preheat oven to 190 degrees.
#2 Get a baking tray and cover with baking parchment
#3 Mix the flax, psyl husks and baking powder in a bowl.
#4 In bowl 2, mix the water and tahini
#5 Stir the dry ingredients into the wet. Now you have your dough. Don't bother kneading or anything like that. the dough will be thicky and reaalllly sticky (have a bowl of warm soapy water ready to wash the dough off your hands)
#6 Now add in your cheese, chives, onion flakes or whatever you want. Experiment with different amounts until you get the right taste. It will be worth it because without step 6, these rolls are more boring than watching paint dry!
#7 Use a tablespoon to scoop out some dough to form a roll on the baking sheet.. I usually make them about 2 cm thick. This recipe makes about 6 rolls.
#8 Bake for about 35-40 minutes.
TIPS
Best left to cool down. They are quite messy to cook, so I usually batch cook them
Sometimes I need to put cheese on top to get enough taste.
They taste best when heated from frozen in the oven.
These are not perfect, but for recovering bread addicts like myself, the absolute best replacement. 2g net carbs per 6 rolls, zero UPFs. I'm not complaining!
