Chocolate Ice Cream Bites
This was given to me as a recipe for Bliss Balls, to be chilled. As you can see from the video below, I freeze these because that taste reminds me of ice cream and is more chocolatey melting in my mouth. So try both versions.
Below the 2 recipe videos is a video of me describing what happened when I tested this out on my kids, and there is a useful discussion about The Replacement Kick. Enjoy!
Ingredients
1 cup ground almonds
Half a cup of sultanas
Half a cup of dessicated coconut
Half to 1 cup of coconut milk
2 heaped dessertspoons cocoa
Optional:
Quarter cup of milled flaxseeds (In the video I recommend these, but you do get the same nutrients in the other ingredients, so if you are on a budget, you can miss these out)
A couple of drops of orange essence or flavouring
A bar of sugar free chocolate sweetened with maltitol, stevia or xylitol
Method
Put the almonds, dried fruit, dessicated coconut, flax seeds and cocoa in a blender and blend.
Add the orange flavour to the coconut milk (if desired) and add the milk to the rest of the ingredients until the mixture is like a heavy dough
Make into balls and freeze for 2 and a half hours
OPTIONAL
Melt some of the sugar free chocolate and dip the frozen balls in, then replace in the freezer.
And here they are dipped in chocolate

What happened when I gave my kids these ice cream balls...
