
Freedom From Sugar
Sugar Free Chocolate Mousse

Ingredients
1 ripe avocado
100g dried fruit (dates or sultanas etc)
3 dessert spoons ground almonds
Quarter to half a cup of coconut milk
30g cocoa powder
Half teaspoon vanilla extract
OPTIONAL
Greek yoghurt
A couple of squares of sugar free chocolate (see the snacks section for guidance)
chopped nuts
Update Dec 2022: I made this recipe before research on natural sweeteners has emerged. Therefore I would avoid the sugar free chocolate on top of the mousse except for special occasions (say when everyone else is eating a very sweet dessert).
IMPORTANT: I have only just started trying this recipe out. I added a little of this and that during preparation. I will update this page with my finalised quantities after I have made it a few times. I encourage you to treat these quantities as a starting point, adding for example more dried fruit if you think it needs to be sweeter. I would love to hear your own personal golden ratios!
Method
#1 Blend the dried fruit. If you only have a stick blender, then soak the fruit in boiling water for five minutes and blend in a tall container as shown below, because it can be a little messy.

#2 Mix with the avocado, ground almonds, coconut milk, cocoa powder and vanilla extract.

Blend it all together. You might want to add some greek yoghurt for more creaminess.

#3 Optionally, grate the sugar free chocolate into the mixture and serve with greek yoghurt and add grated chocolate and/or chopped nuts.
