Chia Pudding

INGREDIENTS- makes a good few portions. Maybe do half quantities the first time you try it. 

100g nut butter (almond or cashew or macadamia for example. peanut butter if not)

90g chia seeds

360ml milk of your choice

About 200g strawberries - can be frozen

2 tablespoons cocoa powder (makes it quite a dark chocolatey taste. Play around with less if you prefer)

A little stevia to taste . The only brand that has no aftertaste IMHO is Nick's - I like caramel flavour . Google it for your own country. You can buy it on Amazon.

A couple of dashes is good

METHOD

Put the nut butter and cocoa together in a bowl. Add 100ml hot water and mix to a paste.

Now add the milk and stevia. Give it a really good stir to really combine everything. 

Add the chia seeds and strawberries.

Either blend it all up with a stick blender or mash it so the strawberries separate.

Leave for at least 10 min to let the chia seeds absorb the milk.

Store in the fridge.

This tastes better the next day, because by then the chia seeds will have absorbed all the liquid and it will have a lovely smooth consistency.

Freezes well. I love it with some greek yoghurt and/or some nuts on top.
